The Nakiri has a very high blade of 60 mm to facilitate scooping up the cut goods. Its completely straight edge is ideal for chopping.

The Sujihiki is perfectly suited for carving already cooked food or filleting raw fish or meat.

Eh, I guess these are fine for the price. They're not super high quality, and the fit is kind of weird in my opinion. I have doubts that they would last a lot of repeat washings, especially the waistband. I returned them.
