Rosso porpora intenso, al naso esprime note molto intense di frutta scura, mora di rovo, ribes nero e ciliegia matura. Al palato è pieno, morbido e rotondo, caratterizzato da un nervo vivace ed intenso. Una leggera scia di sapidità accompagna il sorso verso un finale di grande persistenza, caratterizzato da continui richiami di frutta matura.

La particolare morbidezza e le note più dolci del Ripasso di Bertani sono il frutto di un sapiente assemblaggio tra la selezione delle uve della Valpantena e della zona Classica. Dalla prima provengono infatti la morbidezza e la rotondità, caratteristiche che confluiscono in delicate note di cioccolato, dalla seconda le note più fruttate come la ciliegia, la marasca, il ribes. Il Valpolicella Ripasso DOC di Bertani è un grande rosso che come da tradizione viene lasciato fermentare dopo linverno insieme alle bucce dellAmarone al fine di aumentarne struttura e complessità. Una pratica antica, unica, cui segue una lenta maturazione in botte di poco inferiore ai 12 mesi, periodo necessario a trovare quellarmonia e quellequilibrio che caratterizzano i migliori Ripasso.

A tutto pasto, si abbina ad arrosti, cacciagione, stracotti, brasati e formaggi particolarmente saporiti.
