This Sakai Kikumori GOKUJYO Santoku is a traditional Japanese chef’s knife crafted in Sakai by Kawamura Hamono, designed for professional chefs who demand precision and refined cutting performance.

The blade is made of Yasuki White Steel #2 (Shirogami #2), a high-purity Japanese carbon steel known for its exceptional sharpness, fine edge quality, and ease of sharpening. It is widely regarded as one of the most suitable steels for traditional Japanese knife-making due to its clean composition and responsive edge behavior.

The core White Steel is laminated using the traditional awase (warikomi-style) construction, combining hard cutting performance with a softer iron jacket for improved durability and ease of maintenance.
