Meticulously handpicked, the 2-tonne harvest was divided into three fermenters, each receiving a unique treatment: one fully destemmed to highlight vibrant fruitiness, another entirely crushed to extract grape tannins for structure, and the third enriched with stems at the fermenter base, lending an elegant tannin profile. Post-pressing, these distinctive components were harmoniously blended and aged for 18 months in French oak barriques (10% new). Natural alcoholic and malolactic fermentation further enhanced its character.
Unfined, unfiltered, and true to Six Acres' ethos, this wine was hand-bottled under DIAM with a striking wax seal—a pure and authentic expression of craftsmanship.
