Een karaktervolle Rheingau Riesling met spanning, precisie en veel diepte. Kellermeister Carl Ehrhard oogst hier met de hand in het historische deel van Berg Roseneck, afkomstig uit de oude Ramstein wijngaard. Het resultaat is een droge Riesling die levendig ruikt, strak inzet en lang, mineraal nablijft.

Wijngaarden en regio

De druiven komen van een oud perceel binnen Berg Roseneck, van oorsprong Ramstein genoemd. De steile hellingen en arme bodems geven lage opbrengsten en veel concentratie. De natuur bepaalt het ritme in de wijngaard en dat proef je terug in de helderheid, de precieze zuren en de zuivere aromatiek.

Vinificatie en rijping

De oogst gebeurt volledig met de hand. Wat betekent spontane vergisting en wat proef je daarvan? De most vergist op eigen, natuur­eigen gisten zonder toevoegingen, wat extra gelaagdheid en terroirexpressie geeft. Daarna rijpt de wijn 12 maanden op de fijne lie in groot hout, dat is rusten op de fijne gistcellen voor meer textuur en lengte, zonder het fruit te overstemmen. Er wordt zonder hulpmiddelen gevinifieerd en zacht gefilterd om alle natuurlijke aroma’s te behouden.

Druivensamenstelling

Riesling 100 procent uit Berg Roseneck. Riesling in de Rheingau staat bekend om hoge natuurlijke zuren, precieze citrus en steenfruit, en een minerale ruggengraat die prachtig ouder kan worden.

Proefnotities en serveertips

De geur opent met citrus, groene appel en fijne kruidigheid, gevolgd door natte steen en een florale toets. De smaak is droog en strak met veel energie, gedragen door 6,9 gram per liter zuur en een kristalheldere structuur. De afdronk is lang en mineraal, ondersteund door 12,5 procent alcohol en 2,8 gram per liter restsuiker voor perfecte balans. Serveer op 9 tot 11 graden in een ruim glas bij sushi en sashimi, ceviche, gegrilde forel, salade met appel en venkel of zachte, romige geitenkaas. Dankzij de concentratie en de fijne zuurstructuur heeft deze wijn een hoog bewaarpotentieel.
