Nuits-St-Georges 'les Grandes Vignes' is een krachtige en complexe Bourgogne. Het heeft aroma's van vers rood fruit gevolgd door lichte munttonen en kruiden. In de mond komt het rode fruit terug samen met zwarte bes en aalbes. Het eikenhout is aanwezig maar blijft discreet en geeft de wijn een zachte, licht romige afdronk.
De wijngaarden voor deze Nuits-St-Georges 'les Grandes Vignes' liggen naast de Premier Cru 'Clos des Grandes Vignes' op rode kleigronden met kalksteen. De wijnstokken zijn tussen de 20 en 50 jaar oud en staan op lage hellingen gericht op het oosten. Nadat de druiven handmatig geoogst zijn, worden de druiven in taps toelopende eikenhouten vaten overgebracht. Hier wordt een koude maceratie uitgevoerd gedurende een week waarna de fermentatie op natuurlijke wijze begint. Na het persen gaan de wijnen in eiken vaten om te rijpen waarvan 30 % nieuw eiken. Na rijping worden de wijnen gebotteld door zwaartekracht zonder klaring of filtratie.

Over Sylvain Loichet

Na het afronden van zijn studie aan l’Ecole de Beaune, nam Sylvain Loichet in 2005 de 3,5 hectare wijngaarden over die toebehoorden aan zijn grootouders. Tot voor kort werd de wijn geproduceerd in Comblanchien, maar de kelder bevindt zich nu in Chorey-Les-Beaune. Vanaf de start wilde hij alleen met biologisch geteelde druiven werken om het terroir van alle verschillende Bourgogne ’appellations’ zo goed mogelijk tot uitdrukking te laten komen. Hij is daar wonderwel in geslaagd.

De datum van de oogst wordt bepaald door de rijpheid van de druiven. Sylvain zoekt naar aromatische rijpheid, evenals naar het potentieel van de druiven in alcohol en hun zuurgraad, die uitermate belangrijk zijn bij het maken van geweldige wijnen die goed kunnen rijpen. De druiven worden met de hand geoogst om alleen de beste druiven te kunnen selecteren. De druiven worden voor de tweede keer gesorteerd in de kelder voordat ze worden geperst (voor witte wijnen) en in gistingskuipen worden gedaan (voor rode wijnen).

De gisting van de wijnen vindt plaats in eikenhouten vaten met natuurlijke gist. De witte wijnen worden vervolgens 18 maanden gerijpt en de rode wijnen 24. Nieuw eiken wordt gebruikt voor de helft van de Grands Crus en voor een derde van de Premiers Crus. Voor de kleinere appellations gebruikt hij eikenhouten vaten die 1 tot 4 keer eerder zijn gebruikt.

My Puppy Loves this Indestructible Dragon

My puppy (8 month old black lab mix) loves, loves, loves her dragon. She has had it for 2 months now. It is one of her favorites and gets daily rough play time. It's her go-to toy for fetch and tug games, as well as just general mouthy play. The squeaker gave out after about 4 weeks, but she would binge squeak for prolonged periods (kind of like chomping on gum) so it was almost a blessing when it went silent. She still chomps on it, but at least now I don't have to hear it. Other than the fact that it's a little grungy and bedraggled from so much loving, it is still in amazing shape. The seams and fur are all still intact. There are no visible holes, rips, or weak spots. I love Chew Guard Technology. This dragon replaced her goDog Iguana (from PetSmart) that developed a tear in the fur after about 4 months of heavy use. (It was superficial, just the outer fur layer and not the innards, but we disposed of it before she could eat more fur.) She can be pretty rough on her toys and I can never predict if any given toy will last minutes or months. The goDog stuffies definitely fall into the "months" category, even with rough daily use. Edit: The dragon lasted about 6 months of intensive, hard play before it developed a small tear in the fur. I patched it a couple times, but once my pup discovers a weak spot, it's the kiss of death for any stuffed item. We had to dispose of the dragon (so sad) to keep her from eating any more of the fur. We replaced the dragon with the goDog Chameleon, which is still going strong. I think we will go back to the dragon for our next toy because it's just so darned cute. We gave the dragon to my niece for her golden retriever puppy who is very chew-happy. That dragon is also doing well. You've just gotta love that chew-guard technology. This is one tough toy.
