Bereidingswijze

Verwarm de oven voor op 130 graden. Wrijf de lamsrollade ruim in met zout en peper. Verhit een scheut olijfolie in een pan en bak het lamsvlees op hoog vuur rondom bruin. Leg de rollade in een zware braadslee en kerf met een mes kleine gaatjes in de rollade. Druk hier fijngesneden stukjes knoflook in (ongeveer 2 teentjes). Voeg de takjes tijm en rozemarijn, sjalotten, de overige knoflooktenen en wijn toe aan de ovenschaal en zet de rollade minimaal 6 uur afgedekt met aluminiumfolie in de oven. Keer hem tussentijds om en schenk om het uur met een lepel de jus uit de ovenschaal over de rollade. Haal de rollade uit de oven en schep het lamsvlees, de knoflook en de sjalotten op een warme serveerschaal en dek deze af met aluminiumfolie. Laat het vlees ongeveer 15 minuten rusten.
