Valpolicella Ripasso wordt soms ook wel de baby Amarone genoemd. Dat komt omdat deze Ripasso Valpolicella een tweede gisting ondergaat op het droesem die voor de Amarone wijnen is gebruikt. Overigens wordt deze Tommasi Ripasso Valpolicella niet altijd gemaakt. Alleen tijdens exceptioneel goede jaren, ondergaat de Valpolicella Classico Superiore haar tweede gisting op de droesem van de Amarone.
