Onder de zon van Zuid-Italië, tussen de rode aarde en het zilvergroene blad van onze eeuwenoude olijfbomen, begint elk najaar ons ritueel. De dauw ligt nog op de grond, de lucht ruikt naar gras en aarde, en tussen de takken glanzen de eerste rijpe olijven. Eén voor één plukken we ze met de hand — want alleen zo blijft de natuur ons haar mooiste geven.

Binnen 24 uur worden de olijven geperst. Koud, langzaam en met aandacht. Zo blijft hun volle karakter behouden: een smaragdgroene olie met een zuurtegraad van slechts 0,3% , het kenmerk van pure topkwaliteit.

Toch wordt de oogst elk jaar iets kleiner. De bacterie Xylella fastidiosa heeft in Puglia al miljoenen bomen getroffen. Ook wij zien het gebeuren: bomen die ooit vol leven waren, raken verzwakt. En dat maakt iedere druppel olie nog waardevoller. Echte Pugliese olijfolie wordt langzaam een schaars goedje — vloeibaar goud uit een landschap dat stukje bij beetje verdwijnt.

Diep smaragdgroen met een gouden gloed

Geur
Vers gemaaid gras, groene asperge en zachte tonen van artisjok en bladspinazie

Smaak
Vol, fruitig en levendig met een klein bittertje in de keel, het teken van verse olie. Naarmate ze rijpt, wordt ze zachter en ronder, met smaken van jonge bladgroenten, amandel en zon.

Combinatie
Perfect bij alles wat eerlijk en eenvoudig is: een stuk brood met grof zeezout, over burrata of over gegrilde groenten.

Really liking these baskets. They're very sturdily built, and easy to hang with the included screws and anchors. They're relatively heavy, so definitely use the anchors if you aren't screwing them into studs. The little 'chalkboards' for labeling each one is a cute touch, and they come with three colors of chalk, as well. I did use a wood stain pen around the inside edges of the chalkboard holder's frame, so that it wasn't unstained and unfinished looking. The only one I had was walnut, so it's not a perfect match, but it makes it look more finished and I'm happy with it. I'm using one for holding mail above our key bowl at the door, and the other two are in my laundry room to hold my wool dryer balls. Just be sure to check the measurements so you know if they will work for what you plan to use them to hold.
