They specialise in sourcing organic English grapes from around the UK, working as naturally as possible with hybrid varieties suited to the English climate. Occasionally they also branch out - like this smashing co-ferment, a delicious blend of cider and white wine.
Apples were hand-harvested from unsprayed orchards in Somerset and Devon and naturally fermented over the winter months. They were then blended with Pinot Blanc and Chardonnay grapes (with a two-thirds cider ratio) with 10 days of maceration, and finished fermentation in the bottle as a Pet Nat with no added sulphites.
