The wine is crafted with meticulous care and attention to detail, undergoing a 10-day maceration in stainless steel tanks at 26-28°C, with délestage employed to enhance color, flavor, and tannin extraction. The wine then ages on its lees for 10 months, followed by bottling and further maturation, resulting in a wine with an aging potential of 4-6 years. Served at an optimal temperature of 15°C, this Merlot is an ideal companion to hearty meat dishes and mature cheeses, such as a roast filled with figs and prosciutto, a decadent Reblochon cheese fondue, or a classic rump steak Wellington with lard and mushrooms.
