The Domaine des Damoiselles vineyard covers 25 hectares on the limestone plateaus (tuffeau) overlooking the Loire River in the communes of Parnay, Turquant, and Montsoreau, all belonging to the Saumur-Champigny appellation.
Catherine and Patrice Retif, winemakers since 1985, have converted their estate to organic agriculture over many years and got their certification in 2021.

Their wines are an authentic and qualitative expression of Saumur-Champigny wines. 

L’Ecume is a sparkling white wine made using the traditional Champgne method (first fermentation to produce a still dry white wine, followed by a second fermentation in the bottle to create the bubbles).

Mainly made with Chenin grapes, it also includes almost 30% of the red Cabernet Franc grapes, which give this sparkling wine a very satisfying body in mouth seldom found in such bubbly wines, while the Chenin grapes maintain the tension and freshness of the whole. The bubbles are fine and persistent and the aromas bend towards white flowers, lemon and pineapple.

Very dry, it will be best appreciated served chilled as an aperitif or paired with dessert.
